Mussels with Wheat Beer and Bacon

Ingredients

Olive oil
3.5 oz smoked bacon
2 cloves garlic, thinly sliced
10 oz wheat beer
2.2 lbs mussels
A handful of flat-leaf parsley, chopped
Bread, for serving

Instructions

1. Heat a drizzle of olive oil in a large, lidded pan. Add the bacon and cook until crispy.

 

2. Add the garlic and cook for 2 minutes, then pour in the beer and bring to a simmer.

 

3. Add the mussels, cover, and cook until all the mussels have opened.

 

4. Shake the pan occasionally to redistribute the heat.
