
Miso Mussels

Ingredients
1 liter vegetable stock
1 tablespoon grated ginger
4 tablespoons miso soup paste
1 bunch chopped scallions
2.2 lbs mussels
Steamed rice, for serving
Instructions
1. Heat the vegetable stock in a large saucepan and add the ginger, miso paste, and half of the scallions.
2. Let it simmer and add the mussels. Cover and cook for 4-5 minutes until the mussels open. Sprinkle the remaining scallions on top and serve with rice, if desired.
