
Drunken Mussels

Ingredients
2 tablespoons of butter
4 cloves of garlic, minced
½ teaspoon of red pepper flakes, or to taste
1 lemon, zested
2 cups of white wine
Freshly ground black pepper, to taste
2 lbs mussels
1 cup of fresh flat-leaf parsley, chopped
2 slices of toasted bread
2 lemon slices, for garnish
Instructions
1. Melt the butter in a large pot over medium heat. Add the garlic and let it sizzle for about 30 seconds. Season with red pepper flakes and lemon zest, stirring for about 45 seconds.
2. Quickly pour in the wine and season with black pepper. Bring the sauce to a boil, add the mussels, and cover immediately. Shake the pot and let it boil for 1 minute.
3. Stir the mussels, cover again, and let it boil for 2 more minutes. The shells will start to open. Add the parsley, cover the pot, and cook until all the shells have opened, 1 to 3 minutes.
