Easy Noodles with Seafood

Ingredients

1 lb Mussels in Arrabbiata Sauce
Olive oil
3 oz zucchini, thinly sliced
4 shiitake mushrooms (6 oz), cleaned, stems removed, and thinly sliced
8 oz cabbage, thinly sliced
3 oz onion, thinly sliced
5 oz small-neck clams or more, cleaned
5 oz large shrimp or more, peeled, deveined, and tails removed
5 oz squid rings or baby squid or more
2 lb fresh Korean-style Chinese noodles (or fine udon noodles or ramen noodles)
1.4 oz baby spinach or baby bok choy

Instructions

1. Preheat a wok (or a large deep pot) over low heat until hot. Add the oil, then the zucchini, mushrooms, cabbage, and onion. Cook them until they slightly wilt (about 1 or 2 minutes). Add the whole mussels in sauce with all the liquids, the small-neck clams, shrimp, and squid (or baby squid) and stir a little.

 

2. Cover the soup and simmer until the mussels open and all the ingredients are well cooked (about 8 minutes), being careful not to overcook.

 

3. Remove the lid, add the baby spinach just before serving. (If using baby bok choy, you may need to cook a little longer.)

 

4. While the soup is simmering (in step 2), cook the noodles in boiling water according to the package instructions. Drain and rinse them briefly with cold water. (Steps 2 and 3 should be completed more or less at the same time.)

 

5. Divide the noodles, seafood, and soup into six bowls. Serve immediately.
