
Dynamite Mussels

Ingredients
1 lb of Whole Shell Mussels IQF
1/2 cup mayonnaise
1 tsp Sriracha
1 tsp soy sauce
1 tsp lemon juice
2 tbsp masago (capelin roe)
1 green onion stalk (only the green part)
Instructions
1. Heat the mussels according to the package instructions. Remove the meat from the shells and chop it into large pieces.
2. Mix the meat in a bowl with mayonnaise, sriracha, soy sauce, lemon juice, 1 tablespoon of masago, and green onions (reserve some masago and green onions for garnish).
3. Refill the shells with the mixture.
4. Line a baking sheet with aluminum foil and place the mussels on the tray.
5. Toast at 450°F for about 10 minutes, until the top is golden.
