
Goana-style Mussels

Ingredients
2 lbs whole mussels (in the shell)
Sunflower oil, for frying
1 onion, chopped
A thumb-sized piece of fresh ginger, grated
4 cloves garlic, crushed
2 green chilies, chopped
1 teaspoon black mustard seeds
1/2 teaspoon ground turmeric
2 teaspoons ground cumin
2 teaspoons ground coriander
13.5 oz coconut milk
Cilantro sprigs, for garnish
Lime wedges, for garnish
Instructions
1. Heat the oil in a casserole dish. Fry the onion until lightly browned, then add the ginger, garlic, chilies, spices, a pinch of salt, and some pepper. Cook for 2-3 minutes until toasted and fragrant. Pour in the coconut milk, bring to a boil, and simmer for a few minutes to allow everything to combine.
2. Add the mussels to the casserole, cover, raise the heat to high, and cook for 7 minutes, until the mussels have opened. Sprinkle with cilantro sprigs on top and serve with lime wedges to squeeze over.
